Last week we made a family trip to the local farmers market.
We came home with red onions, sweet onions, 2 egg plants, roma and salsa tomatoes, red and orange bell peppers, and an assortment of hot peppers.
On Friday I made an amazing coconut curry with a jalapeno, some red onion, and fresh basil. Last night we enjoyed roasted red pepper and cheese stuffed chicken with a roasted pepper cream sauce on a bed of whole wheat pasta.
Who needs the Olive Garden when I've got fresh produce!

I love, love, love vegetables - especially bell peppers that are not green. My favorite days are the first and third Wednesday of the month when I get my veggie box from Door to Door Organics. They deliver in the Chicago burbs and in Ann Arbor - home of my FAVORITE college football team of all time - but they do not deliver anywhere in Indiana. :) sh
PS: You should make a road trip to the Chicago area and go to Brookfield Zoo. It is chock-full of creatures.
I am sitting here still at school at 6:08 pm and salivating. That all looks sooooo good.

I love reading your blog. Seeing your pictures makes me happy and sad at the same time. I miss you and West Lafayette so badly. I want to be doing the things you are doing and seeing the people and places you are.
Wow, coconut curry? Adventurous! You can come cook in my kitchen anytime. :-)
How fantastic! I need to get to the farmers market!
