Dinner is served

Tonight we're having pan fried meat loaf stuffed bell peppers. My parents came out for a visit last week to bring us some furniture and gifted us with a freezer full of meat. We don't eat much meat, mostly due to my gall bladder issues, but since I had it I thought I'd look for something exciting to do with it. I'm going to make a goulash next. All this cooking indicates a number of things, among which is the fact that my kitchen is cleaned, unpacked, and fully functional. It's the only one in the house that can fully boast that status, though Hijo's room is pretty close and everything else is functional enough. I've taken lots of pictures, which I will work on posting soon. It's been quite a ride, these past couple weeks, but we are hanging on and for the most part enjoying the ride.
